Three of our close friends from India worked together to create this delicious Vegetable Korma made of cauliflower florets, green beans, carrots, sweet green peas and potatoes in a curry sauce. The curry has a mild, slightly sweet, rich flavour that comes from coconut milk and raisins, cashews and slivered almonds, combined with tomatoes and authentic hand roasted Indian spices. Fragrant lemon-flavoured brown basmati rice with cashews, potatoes and green peas, alongside a daal consisting of a mixture of four delicately spiced lentils and beans, complete this meal. Amy's Kitchen Vegetable Korma should appeal to confirmed fans of Indian food as well as those new to the delights of Indian cookery.
After the birth of our daughter Amy in 1987 we found there was little time to prepare the wholesome nutritious food we normally ate.
