Our 3-4 year-old Japanese style miso is prepared with our barley and/or oats or rice miso that undergoes a third fermentation with the addition of unique ingredients: 5 varieties of Canadian algae (nori, dulse, kombu, alaria and kelp), 3 varieties of organic mushrooms (shiitake, reishi and maitake), and herbs and spices that lend an oriental taste and flavor of the sea. Japanese style miso has functional qualities superior to any other miso:
• One portion provides 1/3 of the iodine daily requirement. Iodine contributes to the normal functioning of the thyroid gland.
• The blend of 3 mushrooms provides a source of antioxidants 5 times greater than in other already rich misos.
• The addition of algae to miso further multiplies its chelating agent content (dipicolinic acid, among others), compounds that naturally contribute to the elimination of heavy metals and radioactive ions.
Japanese style miso is considered to be a source of longevity.
